Put cheese into a mixing bowl and add fresh herbs or flavourings to taste.
Try one quarter clove mashed garlic and two finely chopped spring onions, plus 1 teaspoon of salt flakes and some freshly ground black pepper. Alternatively, you could use sun-dried tomatoes and fresh basil leaves, dried cranberries and crushed walnuts or freshly made pesto.
Put mixture back into the cheesecloth and tie into a ball again. Leave cheese overnight in the fridge so the herbs infuse the cheese with their flavour.
