Watch for the separation between the curds and whey

You want a distinct separation between the curds (the lumps) and the whey (the liquid).

If it’s still like runny milk then add more lemon and wait for it to set.

You can leave the mixture in the pot overnight, for a richer flavour and thicker texture (the room needs to be about 20 degrees Celsius).
