Making your own fresh cheese at home is surprisingly easy. You simply combine milk with lemon, let the mixture curdle, wrap it in a cheese cloth to drain and then mix it with fresh herbs, sun-dried tomatoes, home-made pesto or dried fruit and nuts. Go on - give it a go!
INGREDIENTS
- 2 litres full-fat milk (pasturised but preferably not homogenised for best results)
- 1/3 cup freshly squeezed lemon juice
- Cheesecloth (or muslin)
- Salt & freshly ground pepper
- Cooking thermometer
- Herbs or flavourings as desired - see above
Squeeze the juice of 2-3 lemons to make 1/3 cup juice.
