Grilled Seafood Salad with Persimmons Recipe

This deluxe grilled seafood salad showcases Australia’s top quality seafood with one of summer’s most luscious fruits -- persimmon.

For those that like it hot, the Thai-style dressing can be adjusted to your taste. Make the dressing as detailed below for a mild chili kick or add extra fresh sliced chili for more heat.

This salad is very versatile, too. You can substitute the prawns (shrimp) and scallops with squid (calamari), clams or mussels and the persimmon with papaya, pear or peaches.

  • Seafood Salad
  • 1 tbsp. fish sauce
  • 1 tsp. lime juice
  • ½ tsp. sugar
  • 1 garlic clove, peeled and finely chopped
  • 150 grams (1/3 lb.) raw prawns (shrimp) shelled but with tail on, washed and patted dry
  • 150 grams (1/3 lb.) raw scallop meat with roe on, washed and patted dry
  • 1 tbsp. vegetable or peanut oil
  • 150 grams (1/3 lb.) mixed lettuce, washed and spun dry
  • 1 red capsicum (bell pepper), chopped
  • 1 ripe persimmon, peeled and chopped
  • ½ small red or salad onion, thinly sliced
  • 2 tbsp. fried shallots (optional)
  • A few stalks of fresh mint, coriander and/or basil leaves
  • Dressing
  • 1 tbsp. fish sauce
  • 2 tbsp. rice wine vinegar
  • 1 tbsp. lime juice
  • 1 tbsp. sweet chilli sauce
  • ½ tsp. sugar


1. Place 1 tbsp. fish sauce, 1 tsp. lime juice, ½ tsp. sugar and 1 garlic clove in a bowl and stir to combine. Add seafood and leave to marinade for at least half an hour.

2. Heat up a grill pan until smoking hot and then add oil.

3. Add seafood and cook for a couple of minutes on each side until cooked through and no longer translucent.

4. Immediately remove seafood from pan and set aside.

5. Arrange lettuce leaves in a large bowl and then add seafood, bell pepper, persimmon, red onion, and fried shallots.

6. Tear fresh herbs and sprinkle over the top.

7. Combine all ingredients for dressing in a small bowl and then pour over the salad.

8. Toss to combine and serve immediately.
