Planning your dinner meals for the week gives you more time to spend on things you'd rather being doing. What follows is a sample of quick and easy meal ideas for people on the go.

1. Monday Night: Roasted Vegetable Pasta Salad

This delicious salad consists of penne pasta mixed with roasted vegies including eggplant, zucchini, cherry tomatoes, green peppers and asparagus. The vegetables are topped with crumbled feta and a balsamic, olive oil dressing

2. Tuesday Night: Thai Salmon Curry

In this recipe a succulent salmon filet is lightly poached in a red curry coconut broth with green beans, Thai basil and cilantro. The delicious meal is served with steamed jasmine rice. Thai red curry paste and canned coconut milk can easily be purchased at Asian grocery stores.

3. Wednesday Night: Tofu & Vegetable Stir-fry

In this recipe firm tofu is stir-fried with fragrant shitake mushrooms and crunchy sugar snap peas in a garlic, ginger soy sauce with dried chili flakes for a spicy kick. The tofu can always be substituted with chicken, beef or even shrimp. Having trouble finding shitakes? Just replace them with ordinary mushrooms.

4. Thursday Night: Grilled Chicken Salad

Home late? Don't despair, with this grilled chicken salad, dinner is not far away. It is easy to prepare and the only cooking required is the grilling of the chicken. The salad consists of crispy romaine lettuce, tomatoes, Spanish onion and feta, all topped with a delicious olive oil and white wine vinegar dressing. The chicken can be marinated for up to an hour but if you're in a rush, just marinate it for 10-15 minutes. You'll still be able to enjoy the delicious lemony garlic flavors.

5. Friday Night: BBQ Shrimp with Mango Lime Mayonnaise & Watercress Avocado Salad

The weekend is here so time for some fun with barbecue shrimp and mango lime mayonnaise. The mayonnaise is so easy to make. Simply combine mayonnaise with freshly grated mango, a splash of lime juice and a pinch of sea salt -- that's it! Pair the meal with a scrumptious watercress and avocado salad topped with pink grapefruit.
