The strawberry and mint mojito is of my all time favorite summer party drinks.
I always put the mint in first, followed by the limes then the strawberries and, finally, the sugar. This ensures that the mint releases its flavor but doesn't get to bruised during the muddling.
Ingredients:
- 1/2 cup sugar
- 1/2 cup water
- 7 small mint leaves, plus extra to garnish
- 4 strawberries, sliced plus extra to garnish
- 1/2 lime
- 40 ml medium-bodied rum
- To serve: chilled club soda
- Crushed ice to serve
- Serves: 1
Preparation:
- Make the sugar syrup by combining sugar and water in a small saucepan. Bring to the boil, then cool completely and refrigerate until needed. The syrup can keep in the fridge for up to 1 year.
- In a tumbler, add mint, sliced strawberries, lime and 1 teaspoon sugar syrup and muddle gently.
- Fill with crushed ice, add rum and stir well to mix ingredients around.
- Top with soda water and garnish with mint and half a strawberry.
