So when I saw some gorgeous specimens at a local farmers' market I just had to snap them up.

Oysters have been around for a long time! We have great oysters here in Nova Scotia, but without wanting to sound inconsiderate, you guys in Australia/New Zealand have to try and learn some new recipes! Firstly, of the four recipes you offered, I would rather prefer them raw with perhaps a drop of lemon juice or horseradish or worcester sauce. However, if you check into international cuisine, you will discover such “new” recipes as Oysters Rockerfeller or Oysters Casino, both baked in the oven. Really quite exceptional!Give it a go,eh!
