Cheese and herb scones

The trick for light, fluffy scones is a gentle touch.

If you've experienced a rock-hard scone, this is usually the result of the dough being over kneaded. Another tip is to mix the dough using your finger tips rather than your palms. Mixing lightly with your finger tips will bring the dough together without overworking the gluten.

In this recipe, the scones are flavored with a sharp cheddar, dried oregano, rosemary and chili flakes for a spicy kick.

Hot of the oven, these cheese and herb scones are wonderful with a slathering of butter or a soft white cheese like Boursin.
