The Pavlova, a dessert about which I've written several times, is a national favorite in both Australia and New Zealand.
Both countries lay claim to the meringue-based beauty and it's easy to see why. It's a gorgeous dessert in both its flavor and its structure. Crack through the crispy, pale pink base to discover soft, delicate meringue. What a cake!
Pavlovas are usually topped with freshly whipped cream, strawberries, kiwi fruit, bananas and passionfruit. Or for something more decadent, top with fresh figs and mascarpone.
This time I omitted the strawberries and kiwi fruit and opted for bananas and tropical passionfruit.
