Despite the onset of the cool weather I still managed to get out on the weekend to do some barbecuing. And what better seafood to throw on the barbie then some juicy prawns.
I was preparing appetizers for a dinner party so skewered prawns made easy and delicious finger food. Lightly charred asparagus added a touch of green while homemade lemon pepper mayo added a zesty tang.
I'm a strong proponent of homemade mayonnaise. It's creamy, delicious and versatile and forms the basis of loads of famous sauces like remoulade, seafood sauce, tartare etc. The lemon pepper mayo was gorgeous with the prawns and asparagus and just as lovely on a chicken salad the next day.
