With Easter around the corner there's an abundance of goodies to indulge in - there are Easter eggs of all sizes, chocolate bunnies and let's not forget hot cross buns.
This year I'll be making Easter cupcakes to add to the list. These rich chocolate cupcakes are rather like little mudcakes but with a lighter crumb. Topped with dark chocolate icing and a mini Easter egg, these cute little cupcakes make a fun Easter treat.
Try adding instant coffee to the icing for a delicious mocha flavor or top with desiccated coconut or chopped nuts.
