
Thinking up creative weekday lunches can sometimes be a trial. I try as much as possible to take leftovers from dinner but sometimes I haven't prepared enough food to make it to the next day.
In this case, I usually turn to a quick-fix lunch of tuna-stuffed avocados. I discovered this recipe while on holiday at a beach resort and it's stuck with me ever since.
Since I always have the ingredients at hand, it's pretty easy to whip up in under 10 minutes. In this recipe, canned tuna is mixed with egg mayonnaise, chili flakes, cilantro (coriander), Spanish onion and lime juice and then spooned into ripe avocado halves.
They make a delicious and nutritious lunchbox recipe and will keep hunger at bay.
