
Nothing speaks more of summer than the fruity scent of stone fruit. It's impossible for me to walk past the vibrant red, pink and orange orbs of peaches, apricots and nectarines without reaching out to smell one.
While stone fruit are quite perfect raw they can also be enjoyed grilled, poached, stewed or baked.
In this recipe, delicate white nectarines are baked with honey, vanilla bean, orange juice and white wine until they are soft and tender and then served with a dollop of creamy yogurt. It's a dessert that's immensely satisfying and healthy.

When choosing nectarines, choose fruit that are fragrant, just soft to touch and free of any blemishes or bruises. Stay away from hard nectarines - a sign that they've been picked to early.
