There are so many interesting ways to eat salads these days. The options are endless. One of my favorite salad recipes is this green bean, avocado and prosciutto salad.
It's nutritious, delicious with lots of great textures in the mix with crunchy green beans, crispy prosciutto, creamy avocado and juicy cherry tomatoes. The salad is sprinkled with toasted pinenuts, feta cheese and then drizzled with a simple dressing of extra virgin olive oil, aged balsamic and finely chopped garlic.
A definite crowd-pleaser and easily whipped up in about 15 minutes.
