Eggs Florentine -- The delightful harmony of flavors and colors activates my five senses.

First we start with smell of breakfast. The aroma of toasting sourdough mingles with the mellow, buttery Hollandaise.

Next, we see the gorgeous dish come together with a harmony of colors from the pale yellow of the Hollandaise that coats the delicate poached egg, whose bright orange, molten center spills over the rich green spinach and onto the golden sourdough.

The crunch of sourdough rings in your ears blocking out all sounds and thoughts. The contrasting textures unite – creamy Hollandaise, delicate, molten egg, soft spinach and crunchy toast.

And the taste? Well, that’s the best part.
