Cupcakes are not just for kids.
However, we first discover them in our childhood and return there whenever we hold one in our grown-up hands.
This lemon ricotta cupcake recipe is one of my favorites. It uses creamy ricotta cheese, which you can easily find in your supermarket. The ricotta ensures that these little cakes will never be too dry and the whipped egg white makes them really fluffy.
To literally top this recipe off, the lemon glaze icing really does the trick!
