Creamy Potato Salad

The potato salad has become a victim of its own popularity. Thanks to fast food giants like KFC churning it out en masse, the potato salad, these days, seems a little humdrum.

But potato salads didn’t start at KFC and they certainly don’t end there. There are dozens of varieties with a whole range of delicious dressing options. Splash on some vinaigrette, or cream, or mustard. Add crispy bacon, or plump anchovies, or eggs. Sprinkle on some fresh herbs, or fragrant spices.

For all its many incarnations, there is always one potato salad recipe that I am particularly faithful to -– creamy potato salad with fresh herbs and crispy prosciutto. I also throw in some asparagus spears, pink radishes and a couple of boiled eggs. The dressing is a combination of crème fraiche, chives, parsley, garlic and lemon juice.
