Butter-caper-white wine Pork Scallopini

Scallopini is a cutlet which has been pounded thin, coated in flour and sauteed. For this recipe, I cut a pork tenderloin diagonally to make little cutlets and then folded them in plastic wrap before beating them thin with a rolling pin -- a great way to get rid of your pent-up anxiety.

The sauce is soft and smooth. A base of butter is given interest by dry white wine and life by capers.

I enjoyed this simple dish with garlic mashed potatoes and a watercress and avocado salad.
