Curried Egg and Watercress Sandwich

Given curried egg sandwiches are so simple to make, it’s amazing how many people get them wrong. More often that not they’re either too dry and most of the egg ends up in your lap, they’re drowned in mayonnaise or they’re too bland.

They key to a great curried egg sandwich is fresh herbs, just a dash of curry powder and just the right amount mayonnaise to help bind the ingredients together.

I also like to add chopped watercress and some cucumber into the mix.

Curried egg sandwiches can be made using any bread but I like to use wholegrain toast, Italian ciabatta, rye bread or sourdough.

The curried egg filling also makes for a great salad topping.

This simple sandwich has been satisfying generations of Australians and New Zealanders for decades. The recipe is unchanged give or take a few fresh herbs.
