Warm Yourself with a Chorizo Stew

Sausages have seen somewhat of a "taste-lift" in the past decade with delicious varieties from all around the world now being sold in more mainstream delis. One of my favorite sausages is the chorizo -- a pork sausage from Spain.

Chorizo is made with smoked red peppers which give it a distinctly red hue and smokey flavor. There are actually several types of chorizo with the second most popular being the cured kind which is often eaten uncooked with bread.

One of my favorite ways to eat chorizo is in a potato and cannellini bean stew. The aromatic smokiness and spice of the sausage is a perfect complement to this hearty dish. Chorizo can usually be purchased at delis or specialty meat shops. The sausage can also be substituted with spicy Italian sausages.
