Louise Cake — A Kiwi Favorite

If the Edmond's Cookery Book is the bible of New Zealand cuisine, then its Ten Commandments are listed in its 'Top 10 Best Ever recipes'. The sixth commandment is: "Thou shalt eat Louise Cake."

Louise cake is a thin layer of cake or shortbread slice topped with raspberry jam and a layer of coconut meringue. The cake is baked in the oven until the meringue hardens and cracks slightly. It's a delicious and rather old-fashioned treat to be enjoyed with a cup of tea.

The Edmond's Top 10 list also includes other favorites such as the Banana cake that comes in at first place, pikelets in seventh, ANZAC biscuits in eighth and scones in ninth.
