Jam Thumbprint Cookies

As a follow up to my recent post on strawberries, I thought I'd share with you my thumbprint cookie recipe in which I use homemade strawberry jam.

In Australia thumbprint cookies are also known as "jam drops". The cookies usually consist of all purpose flour and ground almonds. The almonds give a rich nutty flavor and texture to the cookies however if you're allergic to almonds, I'd recommend substituting them with ground oatmeal, desiccated coconut or even semolina.

The name "thumbprint" is given to these cookies because you literally use your thumb to make a well in the dough. The well can be filled with nuts, chocolate or in this case, a delicious homemade strawberry jam.
