Appetizers Made Easy – Smoked Trout Endives
Having guests over for dinner can sometimes be a stressful affair but it doesn't need to be. If you're short on time to prepare, then make things ahead. Trust me, it'll save you a whole lot of stress and afford you more time to bask in the praise of your guests.
One perfect "prepare-ahead" recipe that comes to mind are smoked trout endives. They are easy to make and even easier to eat.
The delicate endive leaves act as edible spoons filled with smoked trout, crème fraîche, sea salt and then topped with slivers of green apple. It may seem odd to mix fruit with fish but the combination results in a perfect balance of the trout's smokiness and the crisp tartness of the apple.
If smoked trout is not available then smoked salmon will also work as a substitute. The same goes for endives -- if they're not available, cucumber rounds will provide a satisfyingly cool crunch.
